El ciclo gastron\u00f3mico de Zuccardi Valle de Uco, que congrega a las m\u00e1s destacadas expresiones de la cocina de nuestro continente, tuvo una cita m\u00e1s que destacada el pasado viernes 7 de julio con la participaci\u00f3n de Gabriel Oggero, de Crizia (Buenos Aires), Mitsuharu \u201cMicha\u201d Tsumura, de Maido (Lima, Per\u00fa) y Sebasti\u00e1n Zuccardi.<\/em><\/strong><\/p>\n\n\n\n

Gabriel Oggero, con su ya cl\u00e1sico sello que combina la cocina de autor con el dise\u00f1o, la meticulosidad y la creatividad puesta al servicio de la m\u00e1xima expresi\u00f3n de los productos de estaci\u00f3n, se uni\u00f3 a \u201cMicha\u201d Tsumura, uno de los m\u00e1ximos exponentes de la comida peruana en el mundo, para ofrecer un men\u00fa exclusivo y completo de pasos para compartir con el sello e impronta de cada una de sus cocinas. Cada plato estuvo cuidadosamente maridado con vinos seleccionados por Sebasti\u00e1n Zuccardi, entre los que se encontraron Zuccardi Blanc de Blancs 2021, F\u00f3sil 2021, Bot\u00e1nico 2021, Concreto 2021, Aluvional Gualtallary 2018, Finca Piedra Infinita 2019, Finca Las Cerrilladas 2019 y Malamado Vintage 2018.<\/p>\n\n\n\n

\u201cEs un lindo momento para Latinoam\u00e9rica para todo el continente, y es el momento para aprovecharlo y ense\u00f1arle al mundo lo que somos capaces de hacer.\u201d \u2013 <\/strong><\/em>Micha Tsumura<\/p>\n\n\n\n

Sebasti\u00e1n Zuccardi, anfitri\u00f3n del encuentro, destac\u00f3 que \u201cEs una alegr\u00eda tener en casa dos amigos y referentes, como son Micha y Gabriel, y celebrar nuestro amor por nuestro lugar y nuestra cultura.\u201d<\/strong><\/em><\/p>\n\n\n\n

En su cuarta visita a Mendoza, Micha reflexion\u00f3: \u201cMendoza no es solamente una tierra donde se hace vino, es una tierra donde se innova. Donde se hace cosas mucho m\u00e1s arriesgadas \u2013 generar nuevas sensaciones y romper un poco la estructura de lo que es el vino en general en el mundo, como pasa con la cocina hoy en d\u00eda. Venir ac\u00e1 es una fuente de inspiraci\u00f3n.\u201d<\/strong><\/em><\/p>\n\n\n\n

Esta gran reuni\u00f3n regional de cocina y vinos tuvo lugar en el restaurant Piedra Infinita Cocina de Zuccardi Valle de Uco, bodega premiada en 2019, 2020 y 2021 como Mejor Vi\u00f1edo y Bodega del Mundo en los World\u2019s Best Vineyards y que integra, desde 2022, el Sal\u00f3n de la Fama de dicho certamen.<\/p>\n\n\n\n

Gabriel es, desde hace 19 a\u00f1os, chef propietario del restaurant Crizia, ubicado en el barrio porte\u00f1o de Palermo. Su cocina es el resultado de una b\u00fasqueda que abarca toda la Argentina y que resalta el trabajo de los peque\u00f1os productores con un claro enfoque en la pesca artesanal, destac\u00e1ndose su particular foco sobre las ostras patag\u00f3nicas, producto del que es gran referente. El primer evento de la serie fue en Crizia, \u201cy ahora estamos replic\u00e1ndolo en el Valle de Uco, un evento en que se trata de unir nuestra cultura y la pasi\u00f3n por Latinoam\u00e9rica, a trav\u00e9s de nuestros productos y los vinos y la gente,\u201d<\/strong><\/em> comparti\u00f3 Gabriel.<\/p>\n\n\n\n

Micha, por su parte, dirige el restaurante Maido, fruto de su pasi\u00f3n por la comida Nikkei, el cual tiene inspiraci\u00f3n en su pa\u00eds, los paisajes, los insumos y su ingenio, que se nutre de sus recuerdos de ni\u00f1o y nuevas vivencias. Maido acaba de ser reconocido en el puesto n\u00famero seis de la lista The World\u2019s 50 Best Restaurants 2023, y ocupa el tercer lugar de los Latin America\u2019s 50 Best Restaurants.<\/p>","protected":false},"excerpt":{"rendered":"
